Paneer Butter Masala

Ingredients:

  • 200g paneer (cubed)
  • 3 large tomatoes (pureed)
  • 1 onion (finely chopped)
  • 2 tbsp butter (or ghee)
  • 1 tbsp oil
  • 10-12 cashews (soaked and blended)
  • 1/2 cup heavy cream
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp kasuri methi (dried fenugreek leaves)
  • Salt to taste
  • Fresh coriander (for garnish)

Cooking Instructions:

  1. Heat oil and butter in a pan. Add cumin seeds, followed by chopped onions and ginger-garlic paste. Sauté until golden brown.
  2. Now, add the tomato puree and cook until the oil separates. Stir in turmeric, chili powder, and salt.
  3. Blend soaked cashews into a paste and add to the pan. Let it simmer for a few minutes, then pour in the cream and garam masala.
  4. Gently toss in the paneer cubes and coat them well with the gravy. Cook for another 5 minutes.
  5. Crush kasuri methi between your palms and sprinkle over the dish. Garnish with fresh coriander.
