Ingredients:

  • 250g bhindi (okra), washed and dried
  • 1 cup curd (dahi), whisked until smooth
  • 2 tbsp oil (mustard oil for extra flavor!)
  • 1 tsp cumin seeds (jeera)
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 inch ginger, grated
  • 1 green chili, chopped (adjust to taste)
  • 1/2 tsp turmeric powder (haldi)
  • 1 tsp coriander powder (dhania)
  • 1/2 tsp red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions :

  1. Cut the Bhindi(okra) into bite-sized pieces and dry them completely.
  2. Heat oil in a pan, toss in the bhindi, and sauté till they turn slightly crispy.
  3. Add cumin seeds. Let them crackle, then add the onions, garlic, ginger, and green chili. Sauté till golden.
  4. Add turmeric, coriander, red chili powder, and salt. Cook for 30 seconds to release the aromas
  5. Lower the flame and slowly pour in the whisked curd. Stir constantly to avoid curdling.
  6. Gently mix the fried bhindi into the creamy sauce. Let it simmer for 5-7 minutes till everything melds beautifully.
