- 1 1/2 cups dried chickpeas (soaked overnight)
- 1 small onion, chopped
- 3 garlic cloves, minced
- 1/2 cup fresh parsley, chopped

- 1 tsp cumin (jeera powder)
- 1 tsp coriander (dhania powder)
- 1/2 tsp baking powder
- Salt & pepper to taste
- 2 tbsp olive oil (if baking)
Instructions:
- Rinse and soak dry chickpeas in water overnight (at least 12 hours).
- Combine the chickpeas, onion, garlic, parsley, cilantro, spices, and baking powder. Pulse until the mixture is coarse but sticky enough to hold together.
- Take small portions and shape them into balls or patties. If the mixture crumbles, pulse a bit more or add a tablespoon of water.
Cooking method(Your preference):
- Baking: Place falafel on a lined baking sheet, brush with olive oil, and bake at 375°F (190°C) for 25–30 minutes, flipping halfway through.
- Air Frying: Cook in an air fryer at 375°F for 15 minutes, shaking the basket halfway.
